It all started with a tea course at George Brown College. Who knew where it would take me.

 

The tea industry perked my interest. Living in an area where specialty teas were not readily available, I saw an opportunity to share my budding passion with others.

 

From an early age, I used to enjoy a cup of tea with my grandmother. It was always a special time for us. We shared a lot with one another, and it's a tradition I carry on to this day.

When someone comes to my home for a visit, it invariably ends with a cup of tea. Of course, now I have a whole selection from which to choose, and you could even blend your own tea if you wanted to.

 

The Tea Cosy is starting off small and slow in order to gain a firm foundation for future growth, and it is evolving in most unexpected ways.

 

We only keep small amounts of tea on hand in order to maintain the best quality we can. However, if you don't see what you are looking for please let me know. We have access to many different teas and can blend something special you have in mind.

How to Store Tea

All teas have a shelf life. The enemies of tea are air, light, moisture, and odours from spices or other foods. To preserve its freshness as long as possible, tea should be stored in a cool and dry place, in a container that is opaque and airtight. An airtight tin is best.

 

Since tea absorbs other odours very easily, it is important to store it away from any strong-smelling foods.

 

DO NOT refrigerate or freeze teas.

 

White Tea

White Tea is a rarer tea and thus more expensive. It is encompassed in the Green Tea grouping. The tea is from the top two youngest shoots of an early crop. It is a tea which is highly prized and sought after, displaying a much lighter and delicate taste, not vegetal at all. It has the least caffeine content.

 

Green Tea

Green Tea was the type of all tea before the British needed it to keep longer and thereby experimented with oxidation and thence created Black Tea. It is more vegetal tasting and lighter but some people by its very nature find it more refreshing. It has less caffeine.

 

Black Tea

Black Tea is generally a more robust, full-bodied tea with a higher caffeine content but remember that you control that with how much you use and how long you steep it. It is what a lot of people traditionally think of as a bracing breakfast cuppa.

 

Oolong

It is a Chinese tea that is oxidized to a level somewhere between black and green tea. It is the most complex tea and tastes more like green tea than black. Flavours range from floral to earthy and sweet.

 

Rooibos Tea or Red Tea

Tastes rather like black tea but isn't really tea at all. It's made from an herb found only in South Africa. The leaves remain green until they are fermented in mounds, spread out to dry in the sunlight then the leaves turn red. It has 400 percent more nutrients than regular tea.

 

Herbal Tea

Herbal Tea is not tea at all but a "Tisane" (from the French "to infuse"). To be truly a tea, it must come from the Camellia Sinensis plant. In this category, there is excellent scope for natural beverages for children or people with caffeine sensitivity. It can be served hot or cold, as a basis for punches, jellies, etc. - you are only limited by your imagination.
